Samosa Timbales

Ingredients

•    1 pkg (500 g) Omstead Corn and Peas
•    1 egg, beaten
•    ¼ cup (50 mL) melted Lactantia Healthy Attitude Omega 3 Margarine
•    1 clove garlic, minced
•    1 tsp (5 mL) each ground cumin and coriander
•    ½ tsp (2 mL) finely grated lime rind
•    ¼ tsp (1 mL) each turmeric, salt and pepper
•    3 cups (750 mL) mashed potatoes, cooled

Directions

Preheat oven to 350°F (180°C). Prepare corn and peas according to package directions. Combine corn and peas, egg, margarine, garlic, cumin, coriander, lime rind, turmeric, salt and pepper. Stir in potatoes until well mixed.
Divide potato mixture between 8 greased 1-cup (250 mL) ramekins. Bake for 40 minutes or until golden. Let stand for 5 minutes.
Run a knife around the edge; turn out to serve.
